真壁味噌店の蔵には、百年を超える木桶が六つ並んでいる。In the storehouse of the Makabe miso shop stand six wooden vats more than a hundred years old.高さは人の背を越え、一つで三トンの味噌が仕込める。They are taller than a person, and each one holds three tonnes of miso.五代目の真壁佐和子は、三十五でこの蔵を預かった。Sawako Makabe, the fifth generation, was put in charge of the storehouse at thirty-five.父が急に倒れ、準備なしに跡を継ぐことになったのである。Her father collapsed suddenly, and she took over without any preparation.蔵の仕事を覚えるには、まず桶を知れと、古い職人の橘さんに言われた。To learn the work, know the vats first, she was told by Tachibana, the veteran craftsman.
木桶は生きていると、橘さんは言う。The wooden vats are alive, Tachibana says.木の間には無数の菌がすみ、それがこの蔵の味を決めている。Countless microbes live in the gaps in the wood, and they are what decides the flavour of this brewery.強い洗剤を使えば、その菌は死んでしまう。Use a strong detergent and those microbes die.だから桶は、水とたわしだけで洗う。So the vats are washed with nothing but water and a scrubbing brush.「手入れなしには、桶はただの木の箱になります」“Without care, a vat becomes nothing but a wooden box.”佐和子は、その言葉を手帳の最初の頁に書き写した。Sawako copied those words onto the first page of her notebook.
一年目の冬、仕込みは思うようにいかなかった。In the winter of her first year, the brewing did not go as she hoped.大豆を蒸す時間が長すぎて、麹の回りが悪かったのだ。She steamed the soya beans too long, and the mould did not spread well.失敗を数えることなしに、味は覚えられないと橘さんは言った。Without counting your failures, you cannot learn the taste, Tachibana said.それでも、三トンの味噌を無駄にしたことは、佐和子の胸に重く残った。All the same, having wasted three tonnes of miso sat heavily with her.二年目は、蒸し時間を十分短くした。In the second year she cut the steaming by ten minutes.三年目には、水の量を変えてみた。In the third year she tried changing the amount of water.毎年、同じ桶から少しずつ違う味噌が出てくる。Every year, slightly different miso comes out of the same vats.同じ味を続けることのむずかしさを、佐和子は三年目に知った。It was in her third year that Sawako learned how hard it is to keep a flavour the same.
四年目の春、大手の食品会社から話が来た。In the spring of the fourth year, an approach came from a large food company.木桶をやめ、金属のタンクに替えれば、量を三倍にできるという提案だった。The proposal was that if she gave up the wooden vats for metal tanks, output could be tripled.衛生の管理も楽になり、値段も下げられる。Hygiene would be easier to manage, and prices could come down.「木桶なしに、同じ味が出せるものでしょうか」“Without the wooden vats, can the same flavour really be produced?”佐和子は正直にそう尋ねた。Sawako asked that plainly.相手は、似た味は作れますと答えた。A similar flavour can be made, came the answer.似た味、という言葉が、しばらく耳に残った。The phrase a similar flavour stayed in her ears for a while.
その晩、佐和子は蔵に一人で入った。That evening, Sawako went into the storehouse alone.桶の縁に手を置くと、木はまだかすかに温かかった。When she laid a hand on the rim of a vat, the wood was still faintly warm.百年の間、この蔵は一度も菌を入れ替えずして味を守ってきた。For a hundred years, this brewery has kept its flavour without ever replacing its microbes.替えようとすれば、もとに戻すことはできない。Once you try to replace them, there is no going back.翌日、佐和子は断りの電話を入れた。The next day, Sawako rang to decline.
五年目の夏、蔵の一つの桶に大きなひびが入った。In the summer of the fifth year, one of the vats developed a bad crack.桶を作れる職人は、全国に数えるほどしかいない。There are only a handful of craftsmen in the country who can build such vats.佐和子は半年待って、四国の工房に修理を頼んだ。Sawako waited six months and asked a workshop in Shikoku to repair it.やって来た桶屋は、六十を過ぎた職人と、二十代の弟子だった。The cooper who came was a craftsman past sixty, with an apprentice in his twenties.竹の輪を締め直す音が、三日間蔵に響いた。The sound of bamboo hoops being tightened rang through the storehouse for three days.「この子に継がせることなしに、この仕事は終わります」と、桶屋は笑った。“Without handing it on to this lad, the trade ends,” the cooper said with a laugh.佐和子は、仕込みの帳面を一冊、弟子に見せた。Sawako showed the apprentice one of her brewing ledgers.失敗の年も、そのまま書いてある帳面だった。It was the ledger in which the bad years were written down just as they were.
