Ayano has been working at the Japanese sweet shop by the station for three years. It is a small shop with nothing but a counter, and Mr Yoshinaga is its only craftsman. Ayano's job is the shop floor, but in the mornings she helps mix bean paste. Cherry-leaf cakes sell well in spring, water jelly in summer and chestnut sweets in autumn. But once November comes, customers suddenly stop coming in.
Last November, Ayano said she wanted to try making a new sweet. Without stopping his hands, Mr Yoshinaga asked simply, “What sort?”「さつまいもを使った、温かいお菓子です。」“A warm sweet, made with sweet potato.” Mr Yoshinaga thought for a while and said, “Give it a go, then.” From that day, Ayano's mornings started an hour earlier.
She steamed the potato, mashed it and changed the amount of sugar little by little. She made it ten times, and all ten times Mr Yoshinaga shook his head.「甘い。 “Too sweet. The taste of the potato has gone.” Each time, Ayano noted down the amounts she had used. On the twentieth attempt, Mr Yoshinaga took two bites.
“This one will sell.” So this is what it means for something to be worth making, Ayano thought at that moment. At the beginning of December, they put the sweet out in the shop.「ほくほく」と書いた紙を、かごの前に置いた。She set a card in front of the basket with nothing on it but the name. On the first day, only ten sold.
The second day and the third were much the same. When the days go by without a sale, you start to feel there is no point in making it. Winter sweets did not look like selling, Ayano began to think. Mr Yoshinaga said nothing and made the same number every morning. A week later, someone from a company nearby bought ten. They had put them out at a meeting, apparently, and they had gone straight away.
From then on, they sold out by early afternoon day after day.「あれだけ直したのだから、うまいに決まっている」と、吉永さんは笑った。“We fixed it that many times, so of course it tastes good,” Mr Yoshinaga laughed. With the new year, Ayano was thinking ahead. Perhaps the same approach could be used for the spring sweets. Even so, one word of “delicious” from somebody makes it worth making. Mr Yoshinaga is bound to be lighting the stove first thing this year too.
