Emily has been going to a cookery class twice a month for the past six months. Today's theme is dashimaki tamago, the Japanese rolled omelette. When Ms Nakamura makes it, the egg folds neatly into layer after layer.「では、みなさんもどうぞ。」"Right, now all of you have a go." Emily picked up her chopsticks too and tried to roll hers just as the teacher had.
However many times she tried, though, the egg tore in the middle. What lay on her plate was not a rolled omelette but plain scrambled egg. The woman beside her was rolling hers neatly at the very first attempt. The teacher laughed and said, "Your heat is too high."
For her second attempt she turned the heat down and tried again. But the instant she tried to lift the edge, it split down the middle again. When she said, "I'll eat all of it at home," the whole class laughed.
As she was leaving, the teacher showed her a small square frying pan.「丸いフライパンで巻こうとすると、やはり難しいんですよ。」"If you try to roll it in a round pan, it really is difficult." Emily had not given a single thought to the equipment. That same day she bought a pan of the same shape and took it home. The price was, if anything, lower than she had expected.
The next morning Emily practised exactly three times in her kitchen. The third egg was lopsided, but it held together to the end. She sent a photo, and the reply came at once: "That shape is just right." At the weekend, Emily invited friends round and served them her rolled omelette. Even now, every time she uses the square pan, she remembers her teacher's words.
